Wild Onion Salad

Ingredients

Scale

16 ounces low-fat cottage cheese, 1%
2 small tomatoes, chopped (about 1 cup)
¼ cup wild onions, chopped
1 large cucumber, chopped (about 2 cups)
To taste salt and pepper


Instructions

  1. In a medium bowl, add cottage cheese and veggies. Mix well.
  2. Serve chilled. Add salt and pepper to taste.

Notes

Add other veggies like bell peppers, carrots, or radishes. Use other types of tomatoes like cherry, grape or canned. Any type of onion, red, yellow or green, can be used in place of wild onions.
