Watermelon Salsa

  • Yield: 4 Cups 1x

Ingredients

Scale

3 cups watermelon, seedless, diced
¼ cup red onion, diced (about ½ small onion)
¼ cup jalapeno pepper, seeded, diced (about 1 large pepper)
1/3 cup cilantro, chopped (about ½ bunch)
¼ cup lime juice (about 2 limes)
To taste salt and pepper


Instructions

  1. In a medium bowl, add watermelon, onion, jalapeno, cilantro and lime juice. Mix well.
  2. Add salt and pepper to taste. Serve at room temperature or chilled.

Notes

Use other kinds of onions like wild, yellow or green. Adjust the spice with more or less jalapeno pepper. Try the salsa with baked chips or on top of fish or chicken.
